How to Freeze Lemon Meringue Pie

Equipment

Ingredients

  • Lemon Meringue Pie whole or slices

Instructions

  • If your pie is homemade, make sure it is cooled before getting started.
  • Decide if you want to use it whole or sliced when you defrost it. If you want slices, make sure to slice your pie now.
  • Flash freeze it by putting the pie or the slices in a single layer on a cookie sheet and placing it in the freezer for an hour or two. The meringue should be stiff to the touch.
  • Remove it from the freezer and tear off a sheet of plastic wrap large enough to completely cover the pie or each slice.
  • Place the plastic wrap flat on the counter and put your pie or slice in the center.
  • Secure the plastic wrap around the pie so that none of the pie is exposed.
  • optional: for extra protection, you can repeat with another layer of plastic wrap and/or aluminum foil.
  • Take your wrapped pie or slices and place them into a freezer bag or an airtight container.
  • Put the lid onto the top of your container. Or, if using a freezer bag, gently press all of the air out of it before zipping it closed.
  • Grab a pen or marker and use it to write the date on your package before setting it into the freezer.

Notes

Fresh: get it frozen as soon as possible to help it maintain the very best taste and quality.
Portions: know what sized portions you will need when you defrost it so that you can freeze it wrapped in those sizes.
Cool:  if you are making the pie at home, be sure it is totally cooled before starting the process to avoid any condensation build up.
No Meringue: while you can freeze it with the meringue on it, it separates a little during freezing.  So, when possible, leave the meringue off and add it fresh after defrosting.
