You can use this method for baked or unbaked sconesnotes:if baking at home, cool before starting.if using uncooked dough, portion and form into scones before getting started.
Flash freeze them by laying them in a single layer on a cookie sheet and then popping them into the freezer for an hour or so. This will get them partially frozen before packing them together which will keep them from sticking to each other.
optional: if you flash freeze as described above, you can skip this step. However, if you don't flash freeze, or if you will be freezing for an extended time this step is important to provide extra protection.Wrap your scone in the desired portion sizes completely and securely in a sheet of plastic wrap and/or aluminum foil.
Toss all of the scones into a freezer bag or an airtight container.
Pop the top on the container. Or, zip the bag shut after pressing any air out of it.
Label your bag or container with the date and toss it into the freezer.
Notes
Cool it off: if you are baking them at home, make sure they have totally cooled before getting started. Otherwise you will get condensation build up in the packaging.Portion them out: decide how many or how much dough you will need at a time; that way you can just defrost the portion size you need each time.Don't crush them: make sure to place them in a spot in the freezer where they won't get crushed. Otherwise they will be harder and more compact at defrosting.
