If you have made your nacho cheese at home, ensure that it is completely cool before getting started.
Portion out the cheese in the amounts you will need as you defrost it.
Scoop the cheese into a freezer bag or an airtight container. note: if using an airtight container, use one sized so that there is only an inch or two between the cheese and the lid. This will minimize the air exposure.
Zip your freezer bag closed, after pressing all the air out of it. If using a container, press the lid securely down on it.
Jot the date on the bag or container and stick it in the freezer.

Cool well: if you make it at home, make sure it is totally cooled before starting to package it up.Make it fresh: whether store-bought or homemade, ensure you freeze as soon as possible to lock in maximum taste, quality and freshness.Portion accordingly: know how much you will use when you defrost and portion it and package it in those amounts. This way you only defrost the amount you need each time.
