Ingredients

  • ¾ cup Butter  softened + unsalted
  • ½ cup Brown sugar
  • ½ cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Allspice
  • ¼ teaspoon Nutmeg
  • teaspoon Ginger
  • teaspoon Cardamom
  • 2 ½ cups Flour
  • 2 Apples peeled + diced
  • ½ cup Caramel bits

Instructions

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease with non-stick spray.
  • In a large bowl, cream together butter, brown sugar, and granulated sugar for 2–3 minutes on medium-high speed.
  • Add in the egg and vanilla extract and mix until fully combined.
  • Add baking soda, salt, and spices (cinnamon, allspice, nutmeg, ginger, cardamom), followed by the flour. Mix until everything is well blended.
  • Fold in the diced apples and caramel bits until evenly distributed.
  • Scoop out the dough using a tablespoon or cookie scoop and space them a few inches apart on your baking sheet.
  • Bake for 10–12 minutes, until edges are just lightly browned.

Notes

Tips + Storage
  • Store your cookies in an airtight container in the fridge for up to 5 days. Or freeze them in zip-top bags for up to a year.
  • Don’t overbake—take them out when the centers still look slightly underdone. They’ll set as they cool.
  • Chewy texture – Avoid overmixing the dough to keep cookies soft and chewy.
  • Soft butter – For easy mixing, let butter sit at room temp for an hour or microwave it gently for a few seconds.
