Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease with non-stick spray.
In a large bowl, cream together butter, brown sugar, and granulated sugar for 2–3 minutes on medium-high speed.
Add in the egg and vanilla extract and mix until fully combined.
Add baking soda, salt, and spices (cinnamon, allspice, nutmeg, ginger, cardamom), followed by the flour. Mix until everything is well blended.
Fold in the diced apples and caramel bits until evenly distributed.
Scoop out the dough using a tablespoon or cookie scoop and space them a few inches apart on your baking sheet.
Bake for 10–12 minutes, until edges are just lightly browned.
