Substitutions & Variations
There are a few easy ways to customize these cookies:
- Spices – Instead of using individual spices, you can use apple pie spice, chai spice blend, or stick with just cinnamon or nutmeg.
- Apples – We like Granny Smith for a tart bite, but Honeycrisp or Golden Delicious also work well.
- Toppings – Boost the caramel flavor by drizzling more on top or add a light icing if you prefer.

Step two: In a large bowl, cream together butter, brown sugar, and granulated sugar for 2–3 minutes on medium-high speed.

Step three: Add in the egg and vanilla extract and mix until fully combined.

Step four: Add baking soda, salt, and spices (cinnamon, allspice, nutmeg, ginger, cardamom), followed by the flour. Mix until everything is well blended.

Step six: Scoop out the dough using a tablespoon or cookie scoop and space them a few inches apart on your baking sheet.

Step seven: Bake for 10–12 minutes, until edges are just lightly browned.
Hint: Don’t overbake—take them out when the centers still look slightly underdone. They’ll set as they cool.
