We were especially excited to create this recipe—it blends our favorite chewy cookie base with crisp apple and rich caramel flavors that feel just right for autumn. They’re a perfect seasonal dessert but light enough to enjoy anytime of year.

In addition to their irresistible flavor, these cookies are also incredibly easy to bake. You’ll need only about 20 minutes to whip up a fresh batch from scratch.

  • Unsalted butter, softened
  • Brown sugar
  • Granulated sugar
  • Egg
  • Vanilla extract
  • Salt
  • Cinnamon
  • Allspice
  • Nutmeg
  • Ginger

  • Peeled, finely diced apples
  • Caramel bits

Substitutions & Variations

There are a few easy ways to customize these cookies:

  • Spices – Instead of using individual spices, you can use apple pie spice, chai spice blend, or stick with just cinnamon or nutmeg.
  • Apples – We like Granny Smith for a tart bite, but Honeycrisp or Golden Delicious also work well.
  • Toppings – Boost the caramel flavor by drizzling more on top or add a light icing if you prefer.

Instructions

These easy steps will help you bake a delicious batch of caramel apple cookies.

Step one: Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease with non-stick spray.

Step two: In a large bowl, cream together butter, brown sugar, and granulated sugar for 2–3 minutes on medium-high speed.

Step three: Add in the egg and vanilla extract and mix until fully combined.

Step four: Add baking soda, salt, and spices (cinnamon, allspice, nutmeg, ginger, cardamom), followed by the flour. Mix until everything is well blended.

Step six: Scoop out the dough using a tablespoon or cookie scoop and space them a few inches apart on your baking sheet.

Hint: Don’t overbake—take them out when the centers still look slightly underdone. They’ll set as they cool.
