If you are making your own carrot cake, bake one up with your favorite receipe.
Decide if you will want the whole cake when defrosted or just a slice at a time.
If you have frosted your cake, you will need to flash freeze it. Place the cake whole or slices, in a single layer on a cookie sheet and pop it in the freezer for several hours. Until the frosting is stiff to touch.
Tear off a sheet of plastic wrap large enough to completely cover the piece of cake.
Sit the cake in the center of the plastic wrap and secure it around the cake.
Then, tear off a sheet of aluminum foil large enough to completely cover the piece of cake.
Sit the cake in the center of the aluminum foil and secure it around the cake.
Place the wrapped cake into a freezer bag or airtight container.
Press any excess air out of the bag and zip it shut. Or, if using a container, secure the lid on it.
Write the date on the container or bag and place it in the freezer.
