Jump to Recipe Print Recipe

Rotel dip is a cheesy classic that’s always a favorite at parties and casual get-togethers. Made with melty Velveeta, savory ground beef, and flavorful Rotel tomatoes, it’s hearty, creamy, and packed with bold Tex-Mex taste.

You can have it ready in just 10 minutes, and it’s all made in one skillet for easy cleanup. A sprinkle of chili powder adds a little extra kick, and you can top it off with whatever extras you like best.

Serve hot with chips, sliced jalapeños, or fresh toppings like chopped tomatoes and cilantro. It’s a great choice for game days, potlucks, or any time you want a crowd-pleasing appetizer that disappears quickly.
